The alcohol is hefty but balanced, giving the wine a heat it wears well. The tannins are big and thick, while the fruit is all about ripe black cherries and chocolate. It hits the sweet spot, but finishes dry.

Made from various St. Helena vineyards, with some additions from eastern Oakville, it expresses all the beauty of Napa Valley Cab. The flavors of blackberries, black currants, chocolate, licorice and smoky cedar are absolutely delicious. Yet the wine possesses structure, not the easiest to achieve with a 100% Cabernet this rich.

Flavorful black tannins give this wine the taste of dark chocolate, the 85 percent cocoa kind. A creamy texture carries all the supple, mineral tannins, with glints of bright fruit underneath. Grown on 10-year old vines planted on rocky, alluvial soils along the Napa River, this should be at its best with a few years of age. Distribution is limited to Raymond's wine club and tasting room.

The saturated ruby/purple-hued 2010 Cabernet Sauvignon Calistoga District Collection reveals a sweeter mid-core of fruit than the St. Helena cuvee, abundant black currant and black cherry notes, a textured mouthfeel and a long finish. It should drink well for 15 years.
