Plush along the edges, but still nicely focused in feel, with cassis and plum reduction notes holding sway, while vanilla, sweet bay leaf and warm anise details fill in. Shows a late tug of warm earth on the finish. Best from 2022 through 2030. -JM

Offers a dense and slightly chewy profile, with lots of fig, black currant and blackberry paste flavors laced with tar and licorice root notes. Shows energy and definition, with long cast iron note underpinning the finish, so just give this time in the cellar to stretch out. Best from 2023 through 2035. -JM

A singed juniper hint leads off, followed quickly by a lush wave of dark fig, boysenberry and blackberry compote flavors. Alluring black tea and wood spice accents swirl in on the finish. Shows lots of mountain-style grip, but this is fine-grained and has fruit to burn. Best from 2022 through 2032 -JM

This meaty, gamey zin evoked food descriptions as well as pairing suggestions. The wine itself is bright and gracious enough to rise above its oaken riches, focusing instead on the scent of hng game, with high-toned cherry scents lasting in a way that would accommodate meaty-stuffed cabbage or a roast pork chop with crisp cracklings at the edges. - J.G.

This is a salty, savory and lengthy white from a cool-climate site, richly layered in butterscotch and baked apple. Made in a hearty style, it remains fresh via underlying acidity and is accented in nutmeg and oak. VIRGINIE BOONE
