Penne Pasta with Feta
1/3 c fresh basil or parsley, chopped
1 T fresh oregano, chopped
1 small jalapeno, seeded & chopped
2 garlic cloves, minced
1/3 c olive oil
2-3 T red wine vinegar
4 ripe tomatoes, cored & quartered
3-4 scallions with green, sliced
1 small red onion, very thinly sliced
6 oz herbed feta cheese, crumbled
12 Kalamata olives, pitted & sliced|
3 T capers, drained
Kosher salt & pepper
1 lb penne pasta, cooked al dente & drained
Mix herbs, garlic & chile pepper in medium-sized bowl. Whisk in olive oil & vinegar. Pour over warm, drained pasta & mix. Add remaining ingredients & season to taste.
