Ingredients
One 10” pre-baked pizza crust
1 T olive oil
2 garlic cloves, minced
2-3 large, ripe tomatoes
1 ½ c mozzarella, coarsely grated
½ cup Kalamata olives, pitted and sliced
½ c Green olives, pitted & sliced
½ bunch fresh basil, thinly sliced in chiffonade
Kosher salt & pepper
Directions
Preheat oven to 400°F. Place pizza crust on a baking sheet. Brush pizza crust with olive oil and sprinkle with garlic. Leave about 3/4 inch crust around the edges. Slice tomatoes thinly on the horizontal. Cover the crust with tomatoes, beginning in the center. Sprinkle mozzarella evenly over the surface and continue with olives. Sprinkle with salt and freshly ground black pepper. Top with basil and place in the oven. Bake for about 15 minutes until the cheese is bubbling.
