Fixin bottle

The Fixin appellation produces both village and Premier cru. The vast majority of production is Pinot noir.  They are often likened to mini Gevreys. The village plots are mainly on lower ground at the foot of the slopes and the soil is a mixture of limestone and marl. During harvest, the grapes were first sorted in the vineyards, then sorted again on a conveyor belt upon arrival at the winery. The grapes were destemmed but left uncrushed and put into vats using gravity. Fermentation was carried out using only indigenous yeasts

  • Winemaking

    Aged 12 months in 30% new French oak which was heavily toasted. The wines was left to age on the lees without racking.

  • Nose

    Notes of violet, blackcurrant and black pepper.

  • Palate

    Nice roundness and concentration on the palate with smooth, pleasant tannins and lovely notes of fresh fruit.
