Chinese Chicken Salad

Ingredients

DRESSING
7 c mandarin orange juice
5 c peanut oil
1 ¼ c lemon juice
5 T chili oil
3 ½ T peeled fresh ginger, minced
5 t salt
2 ½ t ground Szechuan peppercorns                           

Directions

About 14 lb skinless, boneless chicken breast, poached or grilled, cut into strips
35 c mandarin oranges, drained, juice reserved
7 c scallions, white & young green, sliced
5 lb snow peas, blanched
3 large bunches celery, julienned
5 c unsalted roasted peanuts, chopped
10 c chow mein noodles
20 c Napa cabbage, shredded
20 c iceberg lettuce, shredded
5 cans water chestnuts, sliced
5 c chopped roasted unsalted peanuts for garnish
